In Turkey, as I have written before, the meal starts with mezze. A big variety of hot or cold snacks. That's about one of these eateries dishes and today I will write. It is called Chi spice. Includes wheat grits, tomatoes, onions, spices, and...raw meat. I never thought that I'll eat. However, as they say, eat, eat and eat. It is, indeed, very tasty! Patty is wrapped in lettuce, sprinkled with lemon and send in your mouth)

The dish is very popular in the East of Turkey, especially in the South-East. For example, in the city of Urfa, there are the burgers - a whole holiday. People gather in large groups, families, invited folk musicians, singing songs and watching, sometimes up to 3 hours as one of the men, prepares the burgers. These meatballs knead only men, as there is a great strength and endurance. Male kneads for hours, and his assistant cloth wipes the sweat from his forehead. But every Turk is honored to do such a meal. Someone knead half an hour, one hour, and someone 2 or even 3 hours!!! While Turkish man kneads chops, I will tell you the history of these cutlets. How did the Chia Spice (raw meatballs), Bulgur, pepper, greens, meat of ROE deer is, nooooo fire no!!! For us, the people who are not accustomed to this dish with raw meat, it's strange to eat like the Turks strange to eat the herring (for them it's raw fish!!) 0.5 kg of beef (clean, with no fat and the white veins; the ground beef keep in the freezer 1-2 days) 2 cups fine bulgur 2 tbsp pepper paste 1 onion 3-4 tooth. garlic 4 tsp red pepper (flakes-pul biber) 2 tsp of kimyon (cumin - ground cumin) 2 tbsp olive oil 0.5 Cup walnuts (optional) lemon juice or pomegranate sauce chopped parsley and green onions, lettuce (optional) salt First the onion and garlic to RUB on a grater, add the pepper paste, red pepper, (butter, kimyon, nuts is optional, not required), add the beef and knead well together. Add the bulgur and knead for at least 30 minutes. Add salt to taste. Slice thinly the green onion, lettuce and parsley, add and again knead for 5-10 minutes, but you can't add the greens and make a salad. Formed as the photo - clenched in the palm of patties (wetting hands in lemon water, so it's easier to mold) and start lettuce: 10 pieces green onions a bunch of parsley 5 tbsp of sumac (barberry) optional 1 lemon olive oil Finely chop the onion and parsley, sprinkle with sumac, add the lemon juice, olive oil.
Serve with salad leaves and lemon wedges, or salad. Eat this: on a lettuce leaf, put the meat on top of squeeze a wedge of lemon juice, close the sheet and eat!! Or just meatballs with salad! Mmmmmmmmmm!! Vkusnota!!
