For the first time this jam I tried in the Dominican monastery, so I liked that she decided to learn to cook. Here in Portugal, it is called "Laranja amarga", which translated means "bitter orange" - this jam is made from very sour wild oranges. I think Amateur you can increase the amount of lemon juice. Cooking
With a thin knife, remove the zest from the oranges, cut the oranges into 8 parts, covered with sugar, stand before the formation of the juice, add the lemon juice. The water boil with the lemon rind until it becomes soft, pour in the oranges.

Boil the oranges in the resulting syrup for a few hours with the cinnamon stick until the jam is evaporated 2 times.
When the oranges are almost ready, grind all in a blender
Add the chopped zest. Zest is added not all, but about 4-5 pinches (2 handful), the rest you can dry and use for other purposes.
Allow to cook a little more. The jam should be thick.
