Crostini with Tartar of herring
Perhaps no holiday feast is not complete without dishes made of herring. Want to offer delicious eateries crostini (toasted bread) with fresh cucumber and herring. Cooking such meals takes lots of time and You will be able to surprise their guests with a new dish.

Ingredients

  • Baton

    2 piece

  • Cucumber

    0.5 piece

  • Herring

    250 g

  • Dill

    6 piece

  • Vinegar

    2 Tbsp

  • Olive oil

    3 Tbsp

  • Salt

  • Black pepper

  • Red onion

    1 piece

Slice the loaf diagonally (I got 16 slices), spread on a baking sheet and bake in the oven at 180-200*C, until it will turn brown.

While baked crostini, slice thinly diagonally across the cucumber.

Mix olive oil, dill (can be dried or fresh), white wine vinegar, salt, pepper. Marinate cucumber slices in this mixture for 10-15 min.

Finely chop the red (shallotte or white) onions. You can scald the onions in a sieve with boiling water.

Also finely chop the herring fillet. I used a ready herring fillet in oil. It is usually salted. You can use herring, capelin, anchovies or other salted fish that You like, pre-clearing it from the bones.

Mix herring, onion, and chopped fresh dill.

To assemble crostini. Put the dish on croutons of white bread, and top with a marinated cucumber. Croutons you can pour a few drops of the marinade from the cucumbers.

Dish decorate lettuce, dill sprigs and green olives.
