The zucchini I have varieties of zucchini, I always take young. Grind in an arbitrary manner: "fingers", cubes, circles - doesn't matter))) If you grind in a meat grinder - you will get something like caviar, only sharper. I'm the grinding device for French fries.
Vegetables grind in a meat grinder (or blender), blend until smooth. If you like witty, then hot peppers need to add more.
Add: salt, vinegar, sugar and vegetable oil, tomato paste bring to boil... In the original recipe for cooking eggplant, it is recommended to use 1 liter of tomato juice, but the zucchini gives a lot of fluid, so I replaced it with the tomato paste. If you're still going to do the eggplant, then add the juice better.
Place the courgettes. Gravy will not cover all the zucchini, but it is in the process of cooking the zucchini will produce a lot of juice, and gravy will be a lot.
Cook for approximately 1-1,5 hours - they are ready - try it! The longer you boil, the more of the liquid has evaporated, be guided by your taste. You can eat immediately, but cool)))
Or put in jars and roll up. A very aromatic, spicy flavor. This way you can do it again, and eggplants, and zucchini, and peppers, and even cucumbers!!! Very delicious gravy is obtained, it is possible to make any procurement. Bon appetit!!!
