When I posted the recipe tat already taught You to do minced meat. In this recipe we will use. Only, this time, chicken. And it is much faster than pork and beef, because the chicken is tender. First, cut chicken strips 1 cm thick.
Then cut the strips into cubes.
Then take two large, sharp knife and begin to cut meat. And I do it in small portions, 2-3 hours.
Periodically collect the minced meat together and chop again. The cooking meat from one breast (2 profile) took 10 minutes.
It is not so laborious as it might seem at first glance. Don't be lazy and You will get an incredibly juicy meat (and a meat grinder then you do not need to wash :) ).
Bulb clean, grind in a blender.
Add the onions to the mince.
When I posted the recipe for pig-beef burgers, I wrote that the eggs they do not lay, as eggs, make patties too dense. With cutlets from poultry is another story. Minced chicken initially more liquid and an egg, put that meatballs do not fall apart. Well, we have meatballs, pancakes and egg then just "doctor prescribed"

Pork-beef meatballs I did a traditionally fried in oil. I remind you that the oil should be well heated. And the number should be such that reached one-third of the thickness of the cutlets. With chicken, I chose the slightly longer, but a dietary option. Very well heat the pan. Grease with vegetable oil using a silicone brush. Reduce the heat to just over medium (between strong and medium). Cutlets spread wet tablespoon, giving them the shape of cutlets. Fry literally a minute on one side.
And a minute on the other. If you are going to fry in a relatively large amount of oil, then fry for about 3 minutes on each side over medium heat. Then spread on a paper towel to remove excess fat.
But I went the other way. Put the patties on a baking sheet and send in a preheated 180 degree oven for 10-15 minutes.
And get mouth-watering and delicious cakes-pancakes.
