Description

Brioche with ricotta
Offer to cook buns with a filling of ricotta, chocolate and orange peel. Soft buns with flavored stuffing, crispy thin crust, moderately sweet. Lovers of sweet sugar needs to be increased. The recipe was found on Ineta, author Lara (Israel), thank you very much.

Ingredients

  • Milk

    150 ml

  • Butter

    80 g

  • Sugar

    80 g

  • Salt

    0.5 tsp

  • Yeast

    15 g

  • Flour

    450 g

  • Chicken egg

  • Yolk egg

    1 piece

  • Vanilla sugar

    1 pack

  • Ricotta

    250 g

  • Sugar

    2 Tbsp

  • Cranberry

    1 Tbsp

  • Dark chocolate

    1 Tbsp

  • Orange zest

    1 pack

  • Chicken egg

    1 piece

  • Cream

    1 Tbsp

  • Brown sugar

    1 Tbsp

  • Flour

    50 g

  • Vegetable oil

Yeast should be alive, crumble them in a bowl, add sugar (total 1H. L.), pour warm milk, add the flour (4-5 tbsp. of the total). And knead the dough, as for pancakes. Leave on for 10-15 min.

In the bowl of a mixer mix the yeast, add oil, slightly beaten eggs, sugar and vanilla sugar, salt, sifted flour, add parts. With the nozzle hook knead a uniform, sticky dough. If the dough is dry, add a little warm milk. Do not hammer the dough with flour!

A bowl of grease with vegetable oil, put the dough, cover with a lid or damp towel and let the dough rise in a warm place for about 1 hour.

When the dough will increase twice in volume, to take 1st. L. flour and press down the dough, knead 5 minutes. Leave to rise a second time for 30 minutes.

Meanwhile, prepare the filling. Cranberries and fill with hot water for a few minutes, drain the water.

Mix all the ingredients - lemon zest, chocolate tipsy, berries (cranberries, I didn't mix because the grandchildren don't like it, so added to those rolls, which they were not intended).

Approached again put the dough on a work surface, divide into 12 pieces, form a ball (I have each weighing 70g). The dough is lovely to work with.

Each piece of roll or flatten into a circle and put in the center some of the filling. If you have frozen raspberries or cherries, can be added. Gather the edges of the dough over the center to form a ball. Bonding well.

To put the balls seam side down on a baking tray lined with baking paper, leave for 30 minutes min. to rise. I baked in a muffin tin. Form grease with oil. When baking my buns burst, at this point you can top with a skewer to make a puncture. Beat egg, mix with cream, five minutes before baking in greased muffin.

Sprinkle with sugar.

Bake in a preheated oven of 190 to 200C degrees 30 min. before Browning.
