Dessert crepes with Apple-cranberry sauce
In this recipe I combined the dessert crepes from Julia child with Apple-cranberry sauce from the book "delicious pancakes", made according to the technology closest to "Suzette". The result of this synthesis turned out very delicious dessert! True connoisseurs and admirers of this "Crepe Suzette" may not appreciate my dessert. But the rest, I hope, dessert crepes with Apple-cranberry sauce to taste.

Crepes (or in our pancakes) begin to prepare with the test. To the flour add the yolks and mix with a wooden spatula. Then add the remaining ingredients and mix well. The dough should be homogeneous, without lumps. The author of crepes Julia child advises that if the lumps are all the same, the dough should pass through a fine strainer. As the dough is ready, it should be covered with a lid and refrigerate at least 2 hours. Or you can even leave it on overnight. PS I left the dough overnight.

Proceed to baking. To do this: preheat scavarda and grease it with butter using a silicone brush. Then pour a portion of batter into the middle of the pan and quickly rotate the pan so that the dough is evenly spread in a thin layer. Fry the crepes on both sides until it will turn brown. p. S. According to the author of the test is obtained from 10 to 18 pancakes, depending on the diameter of the pans. I got 15 pieces. 3 of them bad turned upside down, torn and was rejected. Crepes (or pancakes) on the Julia child recipe really turn out well, very tender. But there is the difficulty - they are hard to flip. Julia advises to turn with your fingers. E. to take over the edge and flip. This should be done carefully because it's hot and there's a chance of getting burned. Ready pancakes I immediately folded four times.

Now start making the sauce. Apples peel, cut into 4 pieces, remove core, then cut into slices and drizzle with the juice of half a lemon.
