Dissolve the yeast in warm water with sugar and let stand for 10-15 minutes. Gradually add flour, knead the dough, finally add cheese, salt, finely chopped olives and olive oil. Knead the dough for 14 minutes, roll into a ball and place in an oiled bowl. Cover with plastic wrap and allow to rise for 30-40 minutes. Roll the dough into a disk 25 cm in diameter and place on a baking sheet. Cover and allow to rise for 20 minutes preheat the oven to 225 With Lubricating Focaccia with vegetable oil. Sprinkle with coarse salt, herbs (rosemary, Basil, thyme) and grated cheese. Bake for 18-20 minutes until Golden brown Finished Focaccia cool on a wire rack.
