What we will need.
First of all, prepare yogurt balls. Sodium alginate dissolved in 2 cups water and beat well with a blender to Lily-livered state. Let stand in a cool place (in the refrigerator) for 15 minutes.
Yogurt (mine was homemade, made with 6% milk and 1% starter culture) mix with seasoning. You can use seasoning to taste. Importantly, the sauce was quite salty and slightly spicy.

The next step should be done just before serving the salad on the table. Using a measuring (or tea) spoon, very carefully (a spoon it is almost in contact with the solution) to shift a small portion of yogurt in a solution of sodium alginate, trying to yoghurt balls do not touch each other because they can stick together.
Wait 3 minutes, and then gently, being careful not to damage the shell, remove balls with a slotted spoon and rinse in cold water.
