Pie Mad Hatter
Very simple and delicious cake: a thin crisp dough, sweet cherries and a mild protein foam. Could undoubtedly take pride of place at the tea party from Alice in her Wonderland!

Ingredients

  • Flour

    220 g

  • Sugar

    150 g

  • Butter

    130 g

  • Chicken egg

    2 piece

  • Cherry

    500 g

  • Soda

    0.25 tsp

  • Vanilla

    1 pack

  • Starch

    2 tsp

First, prepare the cherries-wash, remove the stalks and seeds.

Separate the whites from the yolks, remove the whites while in the fridge. The butter will melt and leave to cool. Whisk the yolks with 100g of sugar, add the cooled butter, vanilla and soda, quenched with vinegar. Mix well.

Add the sifted flour and knead soft dough. Flour may need less or more depending on your flour.

From dough to pinch off a small piece, a little smaller than my fist, and put this piece in the freezer.

Distribute the dough in shape, forming the sides. I'm a 26 X18 cm

Cherries mixed with starch and put into a form with the dough. Cherry better not take very juicy, varieties such as "Backyard" (yellow with a red sideways) or if you are afraid that cherry will give the juice and the bottom will not be baked, sprinkle the bottom under the cherry milled biscuits. It will absorb the juice.

The remaining whipped whites with 50 gr sugar until stiff peaks. Cover the cherries protein mass.

Out of the freezer and pull out a small piece of dough and grated his three over form. If the dough is rubbed, makatite sausages and lay on top of proteins.

Bake in the oven at T 200C for 25-30 until Golden top. Sprinkle with powdered sugar, pour tea and enjoy!
