Cooking
Make the dough. Take the peas and cook according to instructions.
Not pouring water from the pot, shred the cooked peas in a blender to obtain a puree. If the water left after cooking too much, you're ready to pour. The mixture should be thick.
In the pea puree, add 1 egg, salt and ground black pepper to taste. Stir.
Then add the yogurt. Bring the water (3 tbsp) to boiling. Take a soda (1/2 tsp. without slides) and pour in boiling water, stir, the water will boil. Pour a thin stream into pea mixture and whisk until smooth.
Adding parts to the mix the sifted flour, again mix everything. In the end, the dough should have medium thickness. Allow dough to breathe, leave on time, it will become even softer and lighter.
In the meantime, prepare the onion jam. Take the onion and cut into half rings. In a pan pour the onion with olive oil, sprinkle with salt and, stirring constantly, fry it until transparent.
Add to pan with rosemary, Bay leaf, lemon zest, ground pepper and continue to fry on low heat for 10 minutes.
Then pour in the pan the orange juice,
and the vinegar. Mix well. Cover with a lid and leave to languish on low heat for about 15-20 minutes, stirring occasionally. When the marmalade thickens, and the onion is soft, pull the Bay leaf, lemon zest (optional) and allspice. Put hot jam in clean and sterilized jar - it turns out about 300 ml. Marmalade is ready!
Prepare the pancakes. Grease the pan with oil, pour a couple tablespoons of dough and shape and bake the pancake on both sides until Golden brown.
Serves pea pancakes on the table with onion marmalade. Bon appetit!
