Green pancakes with cheese and garlic
The recipe for these beautiful and delicious pancakes ( without toppings), found in the journal MAKE. I want to share in detail to show how I did it. I used 2 toppings. The first (in envelopes), is a green onion with egg. Second with cheese filling, herbs (parsley, dill, cilantro), and garlic. The spinach gives the pancakes a wonderful flavor. I used frozen spinach. Not all photos turned out, because out of batteries in the camera. On the website there is one recipe for green pancakes, but the dough is different from mine. The number I increased by half, assuming two kinds of toppings.

Products to the test. spinach thaw and blend with 2 cups water submersible blender, if you have no blender, scroll up (not defrosting) in a meat grinder. Sift the flour.

I kneaded in the food processor. Pour the spinach water in the bowl of a food processor, add 2 cups of milk, salt, sugar, baking powder, and gradually add flour. Mix everything carefully.

Beat 3 eggs, add to batter, mix on medium speed.

The final touch, add 4 tbsp of vegetable oil. I was cooking in good olive oil.

Heat the pan (I have a thick bottom), add very little oil and pour a ladle of the first pancake.

The dough is very fluid and perfectly fills the pan. Get a thin elastic pancakes.

Flipped the pancakes perfectly. Following the pancakes you can bake without adding oil. But I "drip" the oil in 3 damn.

It's time for toppings. Boil 5 eggs. Melt a knob of butter (20g.), and finely chop the stalks of green onions (no white parts). Onion salt (to taste) will rastolchem potato with a potato masher, add very finely chopped cilantro and grated on a coarse grater eggs. Mix all ingredients and add melted butter.

Now prepare the second filling. I have Serbian white cheese (in brine), 250 g Mash with a fork, add finely sliced greens (which you have), without stalks and 4 garlic cloves.

Our filling is used. Now spread on a pan, add quite a bit of the same oil and fry on both sides.
