Eggplant stuffed with carrots and dip
Pillsbury. ru loves eggplant and I decided to put in the piggy Bank another recipe delicious and healthy dishes from the little blue.

Ingredients

  • Eggplant

    2 piece

  • Carrots

    2 piece

  • Greens

  • Vegetable oil

    2 Tbsp

  • Vinegar

    15 g

  • Salt

  • Seasoning

  • Sugar

    1 tsp

  • Garlic

    3 tooth

  • Sour cream

    50 g

  • Walnuts

    20 g

We cut our eggplant into long strips and fry in the oil or on the grill (I use a grill without oil, tastier, healthier and prettier).

Filling: grate the carrots, add to the parsley or what you like (I this time I wanted green onions), add 2 finely chopped garlic cloves, salt, sugar, seasonings (I have black pepper, you can dry cilantro...), red wine vinegar and vegetable oil (I olive), stir.

Stuff the eggplant that way.

Make a sauce. I like with cream. Add to the finely chopped nuts, garlic cloves, fresh herbs optional (I added dried mint), salt, stir.

Lay finished eggplant on a platter and serve with sauce.
