Malates with cream and orange marmalade

Orange marmalade. Orange peel gently RUB on a coarse grater. Squeeze the juice from the oranges. Combine juice, zest, sugar and cook until the zest is not going to Shine, and the juice boiled to syrup. Approximate cooking time is 35 minutes. Don't forget that the cooling marmalade thickens.

To prepare Malates we use Jasmine rice from TM Mistral. It will give the aroma and refined taste of the dish.

Malates. In a saucepan combine rice, milk, cream, add a cinnamon stick and a pinch of nutmeg, cook on a low heat for 25 minutes. 5 minutes until cooked add 3 tablespoons of sugar, mix well. After 5 minutes, removing from heat, add raisins, cover the pan for 10 minutes. Then stir again and leave to cool.

Mix rice flour. Grind Jasmine rice in a meat grinder, a food processor or coffee grinder. Mix the crushed rice and rice flour. Not large particles of milled Jasmine rice will give our tempura crunchiness and flavor. Once the rice has cooled slightly lepim balls, giving them an oval shape, coat them in a mixture of flour and ground rice.

Heat our capacity for frying with oil or a deep fryer to 190 degrees. Check the oil temperature, take a small ball of mass and throws in the oil, the ball should not immediately turn brown, should be fried slowly. Fry our balls in oil until Golden brown 3-4 minutes. Custard. RUB the yolks with sugar and corn starch. Milk to boil with vanilla bean or vanilla sugar. Half of the milk mixture add to egg mixture, mix thoroughly and pour into the saucepan with the remaining milk. Cook over medium heat, stirring constantly, until the mixture thickens. Remove from heat and add lemon zest (or lime). Put aside to cool. Not cooling in the fridge!

On the bottom kremanki or capacity to serve, put a couple of spoons of custard, they are beautifully arranged malates, add orange marmalade and decorate with sprigs of mint. You can decorate roses custard. Serve immediately after cooking.
