Eggplant roll with fish fillet and vegetables
This roll do often, it turns out very tasty, this time I decided to share with You.

Ingredients

  • Eggplant

    2 piece

  • Fish fillets

    4 piece

  • Carrots

    1 piece

  • Pepper

    1 piece

  • Onion

    1 piece

  • Beets

    1 piece

  • Tomato

    1 piece

  • Olive oil

    3 Tbsp

  • Greens

    1 coup

  • Lemon

    1 piece

  • Salt

  • Spices

Cooking

cut the eggplant lengthwise and fry in a non-stick pan, without oil

put the eggplant in the overlap and top with 2 slices of fish on it -chopped vegetables

finely chop the carrot, pepper, tomato(without skin), onion, greens

put 2 more fish and turn gently. That's the way it should be

put on a baking tray lined with baking paper, and bake 20 minutes. My roll was similar to the fish without head and tail, I decided to give this fish shape. Beets cut the fins, head, tail, remaining slice of eggplant, a breakdown shows what's inside yummy.
