At home I have, as always, a lot of spinach and many dishes are just boring. What salads did! In search of something new, delicious and easy came across a recipe danyh cupcakes on one of the British culinary website. Immediately, without hesitation, decided to make and the result is superb. Very tasty, tender, and most importantly - without flour! Like those who does not like spinach! You just try this simple but elegant little muffin with spinach!

Cooking
Preheat the oven to 400°F (180 C). Spinach batches grind in a blender and transfer to a bowl.
Add ricotta (or cottage cheese), Parmesan, eggs, garlic, salt and pepper.
Mix everything until smooth.
Take 8 of muffin molds (I had more molds from foil, I decided to use them). Sprinkle each lightly with olive oil and fill with spinach-cheese filling. The molds will be complete. I did a half order for 2 people, so I have 4 molds, they are wide, but the cupcakes turn out lower. If you like a lush, but small, use other cookie cutters, a matter of taste!
Bake for 20 minutes, turn off the oven and let stand for 5 minutes. Take out from the oven, detach the edges with a knife and gently turn on the dish (I had as rabbits jumped out:) ). Serve warm, sprinkle with Parmesan if you wish. I am for a change used a different cheese varieties.
