Not yet ended the season of plums, will pamper yourself with delicious cheesecakes, pies even more, based on the Moravian kolaca - round cakes that are made with three fillings - jam, cottage cheese and poppy seeds and sprinkle on top of sweet topping - strazile. Present to your court a modern interpretation of the old recipe and dedicate it to great Moravia, one of the historical regions of the Czech Republic, which along with Kievan Rus was one of the most ancient of the Slavic States. Moravia is a land of vineyards, folk traditions and wonderful beauty.

Cooking
In warm milk stir the yeast, sugar and two tablespoons of flour. Put in a warm place until the formation of the foam cap. Sift flour, mix with the rest of the sugar, vanilla sugar, pinch of salt, egg yolks and melted cooled butter.
Add the yeast dough and knead the dough. Put the dough in a bowl, cover with a towel and put in warm place to rise.
Meanwhile, prepare the filling. Plums to wash and dry. Remove seeds and cut into quarters.
Soft cheese without grains, add two eggs, sugar and ground poppy seeds, and stir. Adjust amount of sugar according to your taste.
When the dough will increase in volume twice (about an hour), divide it into 12-15 pieces (depending on what you want cheesecake - smaller or bigger, I have large). On a baking sheet covered with baking paper spread out the pieces of dough and using cups to make them recesses for the filling. Don't forget the bottom of the glass periodically to dip it in the flour so that it doesn't stick to the dough. Cheesecakes will rise, so don't lay them too close to each other.
Then fingers to expand the recess. Lubricate the edge of the cheesecake egg.
On the edge to build a "crown" of plums.
In the middle put cheese and poppy fillings.
Sprinkle with almonds. If you want to enhance the almond flavor and get a more expressive color, fry the petals a couple of minutes on a dry pan. I have not roasted.
Bake cheesecakes in preheated oven 20 minutes at 180 degrees. Here they are piping hot.
The cooled cheesecakes can be sprinkled with powdered sugar.
Delicious treat is ready. The same cheesecake you can bake the apples.
