Portioned muffins with raspberries and vodka

Ingredients

  • Vodka

    50 ml

  • Sugar

    1 Tbsp

  • Raspberry

    150 g

  • Flour

    200 g

  • Leavening agent

    2 tsp

  • Soda

    0.5 tsp

  • Powdered sugar

    125 g

  • Salt

    0.25 tsp

  • Milk

    0.5 cup

  • Butter

    60 g

  • Chicken egg

    1 piece

The words of the author. Mix vodka or brandy (instead of brandy) and sugar for half an hour to soak in the syrup raspberries. Heat the oven to 200 degrees.

In a bowl, combine the flour, baking powder, baking soda, powdered sugar and salt.

Fold the raspberries in a colander and decant the alcohol into a separate bowl. In this dish add milk to make 200 ml of solution.

Whisk the milk-alcohol solution with the oil and egg

add the resulting mass to the flour, stirring short movements.

Gently add raspberries and stir.

Fill 2/3 of the dough on a greased grooves for muffins or muffin tins. Bake for about 20 minutes. Switch off the oven, remove the form and leave to stand for a few minutes. Then remove muffins and cool on wire rack. Serve fresh and warm.
