The idea of such toppings was born by accident in the office kitchen, when we all tasted the beet pancakes. They are so pleasant and pronounced flavor of beets that someone remembered the salad "Herring under a fur coat". It is done! Since it's not quite the classic "Coat", let's call "the Coat" :-)

Cooking
Beets, carrots and potatoes boil or steam. I love beets baked in foil in the oven, and the carrots and potatoes steamed in a slow cooker (30 minutes). Peel the vegetables, beets blend it with a blender.
For pancakes beat eggs with salt and milk, beat in the flour with the baking powder, beet puree. Sunflower oil heated in a frying pan and pour in batter. Fry pancakes on medium heat on both sides. Do not rush to turn, as the dough with the addition of vegetable purees and more capricious - give the first pancake to brown on one side.
Here are are bright pancakes.
The carrots and potatoes to grate on a coarse grater. Onion and herring fillet finely chop.
Pancake grease caviar. You can certainly do without it, but so much tastier. Sprinkle with grated potatoes, carrot, leaving a free two parallel edges. Grease a little mayonnaise (for the most ardent opposers of mayonnaise it is possible and without it)
Closer to the edge spread chopped herring, sprinkle with onion
We turn off rolls and put into the fridge. Can be served immediately, but is better chilled rolls cut, and parts of the filling have time to make friends. Before serving cut the rough edges of the rolls.
