Lenten carrot cake
The warm spring sun... Orange mood... Juicy tart with citrus flavor... Grateful to the faces of my rabbits...

Ingredients

  • Carrots

    2 piece

  • Sugar

    1 cup

  • Flour

    2 cup

  • Vegetable oil

    0.5 cup

  • Soda

    1 tsp

  • Salt

  • Orange zest

    1 piece

  • Kumquat

Cooking

Peel the carrots and grate on a fine grater (should make approx. 1.5 cups). Add 1 Cup (can be less) sugar, stir and set aside for 15 minutes.

During this time, chop the kumquats and carrots to it.

Grate the carrots zest of one orange (more or less). Instead of zest, add the cinnamon (to Your taste).

Already gave a little carrot juice. Add the flour, a pinch of salt, soda and vegetable oil.

Stir the dough.

Put into the form (I'm on the parchment, or grease with oil). And put in the oven for ~ 30 minutes.

Take out the pie from oven and sprinkle with powdered sugar. You can also cut and miss the sour cream or jam.
