To prepare the marinade: squeeze the juice from the lemon, grate the zest on a grater. Garlic cut in half, remove the core. A piece of ginger, peel and finely chop. Chop the chili pepper.

Mix brandy, sugar, lemon juice, lemon zest, ginger, Chile and garlic. I used sugar "Mistral" universal reed.
