How many clever recipes we've dreamed up, meat with potatoes and greens is a classic that will never go out of culinary fashion. Simply it is very tasty. Steak, marinated in mixture of soy sauce, lemon juice and olive oil, it becomes very soft, tender and acquires a spicy flavor. Crispy potatoes with rosemary – a great side dish for this meat and the arugula adds freshness and astringency.

Cooking
1. Meat wash, dry and wipe.
2. Mix soy sauce with olive oil, passed through the press garlic and lemon juice, add pepper, and stir everything well. Pour the steak marinade, close with cling film and leave overnight in the fridge.
3. Potatoes cut into cubes. Mix olive oil, finely chopped rosemary, pressed garlic, add salt and pepper. Pour diced potatoes rosemary oil.
4. Put potatoes on a baking sheet and bake in the oven at 200C for 40 minutes, not stirring. Then slightly shake the pan, very gently stir with a metal spatula and return to the oven for another 20 minutes. Time and temperature depend on your oven. Cubes of potatoes should be crispy on the outside and soft on the inside.
5. The steak, remove from refrigerator, Pat dry with paper towels and bring to room temperature. Fry the steak on medium heat for 5 minutes on each side, then cut into thick slices. Fry the individual slices again for 1 minute on each side of the cut, if you like your meat rare, 3 minutes if you like fully cooked meat.
