Ginger cupcakes with coffee frosting
Spicy, fragrant, delicious donuts with coffee glaze. A lot of spices, the taste is reminiscent of gingerbread, but very soft and airy.

Ingredients

  • Cinnamon

Preheat the oven to 180 C. Dry spices: cinnamon, ginger, allspice, cloves, minced.

Prepare the dough for donuts. In a large bowl mix the sifted flour (1 Cup.), the baking powder (1 tsp), baking soda (0,2 tsp), cinnamon, ginger, allspice, cloves, salt (0,2 tsp) and 60 g of brown sugar.

Add the egg, applesauce, maple syrup, 1 tbsp. spoon of milk and half the oil (2 tbsp). Knead a stiff dough. I didn't have applesauce and maple syrup. I replaced the Apple jam (60 ml) and diluted with 2 tbsp water, turned to liquid applesauce.

Put the dough in a pastry bag or plastic bag. Trim corner of bag and squeeze the dough in a greased form for baking doughnuts to fill up on 1/2. A little shake on the table the mold with the dough, so that the dough spreads evenly. Bake doughnuts in the oven for 15-20 minutes, it depends on the size of your molds. I have no molds for baking donuts and I baked it here in this form. It turned out baked, plump and flavorful donuts.

Prepare frosting. Melt the remaining butter with the remaining sugar in a small saucepan over medium heat. Bring to the boil and cook for about 2 minutes, stirring occasionally. Add 1 tablespoon of milk

1 tsp. instant coffee, stir well and again bring to boil. Add parts of powdered sugar. If the icing will be too thick, dilute it with the remaining 1 tbsp. of milk. You can substitute milk for juice or for more aroma and taste in 1 tablespoon of rum. Choose to your taste. In any case, the glaze is delicious.

Without removing the glaze with a slow fire, to dip her doughnuts (top). Put the donuts on a grid, the frosting hardens very quickly.
