The Moroccan flat bread
Traditionally these cakes are served with a Moroccan stew. But they also perfectly fit various dips or salads. I addition served pumpkin caviar.

Ingredients

  • Water

    300 ml

  • Flour

    500 g

  • Semolina

    120 g

  • Yeast

    1.5 tsp

  • Anis

    1.5 tsp

  • Sugar

    0.5 tsp

  • Salt

    1 tsp

  • Sesame

  • Olive oil

Cooking

In a bowl, mix water, sugar, yeast, semolina, anise and 150 g flour. Stir and leave for 5-10 minutes.

Then add salt and the remaining flour. Knead the dough (a bit lipoate) by adding at the end of kneading the butter.

Put a Cup of dough in a warm place for 1.5 hours.

Approaching divide the dough into several parts and hands to form cakes. Cover them with cling film and leave for 15 minutes. Then grease the surface with butter and sprinkle with sesame seeds.

Bake in a preheated 200 degree oven until light Golden brown. Time depends on the diameter and thickness of the pellet, it takes 15 to 25 minutes. Do not overdo, otherwise the cracker.
