Ingredients

  • Goose

  • Carrots

  • Onion

  • Spices

Take a goose and cut into pieces (I had half of a small goose).

Goose salt, pepper and put in a cauldron of sunflower oil.

Cut into fine julienne carrot, onion half-rings mode.

When a goose is well browned (within 30 minutes), put back the carrots and onions. Add Bay leaf, spices (cumin, dried tomatoes, barberry).

All to simmer for an hour with the lid tightly closed (periodically turning the pieces).
