Cookies
Acqua (Yakgwa) is a festive cookie that is cooked on a Korean holiday Chuseok, which is celebrated in autumn, typically in September. The name "Acqua" can be literally translated as "healthy cookies". Well, this cookie is called because its constituent ingredients have long been used by the Korean healers to treat various ailments. It is believed that Acqua appeared in Korea during the Koryo dynasty. Mention of it is contained in the historical Chronicles of the period. We tried it and it's great cookies, though I like the sweetness of the biscuits was not called. Come, let share with you the recipe.

Ingredients

  • Ginger

    10 g

  • Honey

    5 Tbsp

  • Wine rice

    2 Tbsp

  • Sesame oil

    3 Tbsp

  • Brown sugar

    1.5 cup

  • Cinnamon

    1 tsp

  • Vegetable oil

  • Flour

    1 cup

  • Salt

  • Pepper white

  • Water

    1 cup

  • Sesame

Ginger RUB on a small grater, and using cheesecloth to squeeze the juice out of it. You should get 3.5 tablespoons. If not enough, add more.

Mix 3 tablespoons of ginger juice with honey and rice wine.

Mix the flour with salt, cinnamon and white pepper.

Then in flour with spices, add sesame oil and mix well.

The butter - flour mixture through a sieve.

Add honey with ginger and rice wine, knead the dough.

Roll the dough into a thin layer, fold it in half and in half again. It turns out 4 layers, thickness should be about 1.5 cm Notch cut out cookies. Usually it is made in the form of a flower, but I have a seizure, so I made heart-shaped.

Cook the syrup. The water will mix with the sugar and bring to a boil, then the fire will diminish and stirring occasionally cook for 10 minutes. Remove syrup from heat, add 2 tablespoons of honey, 0.5 tsp of cinnamon TM Haas, and a teaspoon of ginger juice. All mix and let cool.

In a deep frying pan warm up the oil to 140 degrees and fry our cookies on low heat until Golden caramel in 10-15 minutes. Do not overheat oil! Otherwise the cookies will quickly fry on top, and inside will remain raw.

The finished cookies put on a napkin to soak up excess oil. Then put the cookies in the syrup and leave for at least 2 hours.

To make this cookie I used cinnamon flavored TM Haas.
