The liver in citrus caramel
Someone will say that the liver has no place on the holiday table. But this recipe, I think I may oust the traditional main dishes. Very tasty, tender liver with citrus notes will not leave anyone indifferent.

Ingredients

  • Chicken liver

    300 g

  • Grapefruit

    0.5 piece

  • Orange

    0.5 piece

  • Sugar

    20 g

  • Salt

    8 g

  • Soy sauce

    1 Tbsp

  • Butter

    5 g

Cooking

Liver clear from the films, rinse and cut into small pieces.

Squeeze the juice of half a grapefruit and orange.

Put the pan on a medium heat. Add butter, citrus juice, soy sauce, sugar and salt.

To make the caramel. After 5-7 minutes, you should see medium to large bubbles.

Add the liver. During the laying of the liver, the bubbles may disappear, but then they appear again.

With continuous stirring, to cook to readiness of a liver (it took me 4-5 minutes). Fry the liver better in small portions.
