Fresh sardines enjoys much love from the Spaniards. What methods of cooking do not come up for a fish. In Andalusia it is put on a flat stick, stuck in the sand near the fire, baked and served to the table. I cooked sardines, more civilized way: in the oven, in a clay pot with vegetables.

Cooking
Fresh sardine - tight shiny fish, covered with scales.
Clean sardines, remove the head, innards. Carefully extracted the spine and leave open
At the bottom of a clay pan, pour spoon of oil, put a layer of sliced vegetables,
on top lay a layer of sardines, sprinkle with salt, pepper, another layer of vegetables until you use all the sardines.
The latter should be a layer of vegetables sprinkle with crushed red pepper, saffron, pour olive oil, cover with a lid and put in oven for an hour.
When roasting vegetables stands out the juice, which boiled fish.
Serve the peppers hot with sauce and vegetables, water with lemon juice
