Gomentashi
Gomentashi is triangular pies with sweet filling, usually with poppy seeds and raisins. The feast of Purim celebrates the salvation of the Jews from the destruction prescribed by the decree of the Persian king Ahasuerus and his Prime Minister Haman. On this day, traditionally baked "homentashen" – cookies or patties triangular shape in the form of ears or pyramid – in the form of a purse of Haman.

  • Orange zest

    2 tsp

  • Cinnamon

2. To prepare the filling. Scald the poppy seeds with boiling water, mix with milk and honey, cook on low heat, stirring frequently, until the mixture thickens, add the zest, scalded raisins, stir and chill.

3. Make the dough. For the dough, beat softened butter, sugar, vanilla sugar, a pinch of salt and the egg in a lush light weight.

4. Sift the flour, add the cinnamon and baking powder, mix well.

5. Stir in flour mixture in makenow, knead the dough.

6. Roll the dough out to a thickness of ~ 0.5 cm and cut out circles with a diameter of ~7-10 cm

7. On each circle put 1 teaspoon of filling,

8... edges to seal the triangle, leaving the middle open. Brush with beaten egg yolk and place on a baking sheet.

9. Preheat the oven to 180 degrees, bake gomentashi 20-25 minutes, until browned. Enjoy your tea!
