I guess everyone has a favorite filling for pancakes. My husband loves the combination of cheese, cherries and almonds. Here, with such a flavorful filling and made pancakes original moulding. The recipe is a bit laborious but it worth it.

Cooking
Prepare the filling. Take the cherries I have frozen. In a saucepan put the cherries, sugar and heated. If you have fresh cherries, then pour 50 ml of water.
For added flavor brandy (can not put), the star anise.
Bring to a boil and ovarium until thick about 5 minutes on medium heat. Set aside to cool.
Take the cheese and crushed almonds, mix well.
Add to the cream cheese cooled cherries, stir.
Pour the cream and stir again.
Prepare the pancake batter. I have the usual recipe. Take the warm milk (40 degrees), put the sugar, salt, egg. Whisk (stir) with a mixer.
Add flour and baking powder, whisk until smooth.
Add the sunflower oil with olive, "Olive mix" from the "Oleina" (1 tbsp.).
In this recipe the dough should not be liquid, the density of as kefir.
Can bake in an ordinary pancake pan, but for aesthetics, I took a small frying pan, a gift from "the kitchen Boy". Liberally grease the pan with oil, "Olive mix". You will need to lubricate before each new pancake.
On a hot frying pan, pour a ladle of batter, evenly distribute it by rotating the handle.
As soon as the dough is "clutch", put in the middle, closer to one of the edges of the strip of filling (about 2 tablespoons).
Folded around the second (empty) half of the pancake, forming something similar to a Taco. Slightly press the edges (you can spoon when hot) that they held together.
Diminish the fire and fry the pancake for 1 minute on each side.
