Baskets of rolled oats with carrot candied

Ingredients

  • Oat flakes

    100 g

  • Flour

    4 Tbsp

  • Butter

    50 g

  • Milk

    4 Tbsp

  • Brown sugar

    130 g

  • Yolk egg

    2 piece

  • Banana

    100 g

  • Cream

    30 ml

  • Chicken egg

    2 piece

  • Cheese

    100 g

  • Corn starch

    2 Tbsp

  • Vanilla sugar

    2 tsp

  • Sugar

    100 g

  • Water

    100 ml

  • Carrots

    2 piece

  • Orange juice

    50 ml

  • Lemon peel

  • Cinnamon

  • Honey

    2 tsp

Cooking

Carrots cut into cubes. Cook the syrup 100 ml of water and 100 g of sugar, add the cinnamon, lemon zest, orange juice, carrots, simmer 20 minutes on very low heat. Set aside.

100 g of a cereal grind. I use oat flakes Mistral.

Of crushed cereal, 2 egg yolks, 80 g brown sugar, 1 tsp vanilla sugar, milk, knead the dough, then gradually add the flour to obtain a homogeneous dough. The amount of flour given roughly, look at the consistency of the dough with flour to score not needed!

Molds for baking grease with butter and probility flour, shake off excess. Spread oat batter uniformly distributed over the entire form. Of this amount, I got 6 cupcakes. Set aside.

For making cottage cheese and banana filling, grind in the blender the soft sweet banana, cheese, cream, eggs, brown sugar (50 g approximately), vanilla sugar. Then add corn starch (I use a mixture tvoropysh, it put a little more), mix well.

Spread cottage cheese and banana filling in the cupcakes. Bake in a preheated oven at 180°C until tender. The top is slightly browned.

The finished cupcakes when cooled can slightly settle, this is normal. Top coat the muffins with honey, decorate with candied carrot.
