Description

Plum chutney
Thick sweet and spicy sauce is perfect for poultry and meat. A whole bunch of spices makes it a fantastically flavorful, and the cooking is not very complicated. I recommend to prepare, especially now the season of plums!

Ingredients

  • Drain

    2 kg

  • Raisins

    200 g

  • Dry white wine

    300 ml

  • Vinegar

    300 ml

  • Onion

    2 piece

  • Brown sugar

    300 g

  • Ginger

    2 Tbsp

  • Peppers red hot chilli

    3 piece

  • Star anise

    3 piece

  • Coriander

    1 tsp

  • Carnation

    4 piece

  • Cinnamon

    1 tsp

  • Salt

    1 tsp

  • Olive oil

    70 ml

  • Soy sauce

    50 ml

Cooking

Chili pepper slice.

In a saucepan lightly fry the onion and pepper.

Add ginger, spices (pre-grind in a mortar or coffee grinder), raisins, sugar, salt.

Add the vinegar, wine, soy sauce. Simmer on low heat under a lid for 30 minutes.

I took soy sauce TM Cccamp.

Plums cleaned of seeds, cut into halves

Add to the skillet. Mix well.

Stir and cook on low heat for about 2 hours, stirring occasionally. While the consistency will be quite thick and viscous

When ready, spread the chutney in sterilized jars. Bon appetit!
