Onion finely chopped. Garlic to clean. Tomatoes without skin cut into slices. In a saucepan, heat olive oil. Add the onion and fry until soft. Squeeze the garlic and add the tomato paste. Lightly browned.
Add tomatoes with juice, salt, pepper. Bring to a boil, reduce heat and simmer 45-60 minutes, until the mixture will become much thicker. Add sugar, mix well and season with salt and pepper to taste, if needed. To process the sauce in a blender until mushy state. Use it on purpose! Note: if the sauce you don't need, and pour it not want, you can simply freeze the required amount. Then just defrost it in the fridge and use on, but freeze I do not recommend it.
