Dish "Moors and Christians" is so named because of the combination of the dark beans and white rice. The whole of Spain was once divided between the Europeans and the Moors – the Arab Caliphate, who fought with each other. Rice and beans also was found recently. Europeans once brought rice to America, and took out the beans, an American plant. In Spain and in Latin America, this dish is served during the celebration of the liberation of the Iberian Peninsula from Arab rule. Once there was a religious war, and now remained only the delicious food that everyone brought a little bit of his. Holidays in different cities are costumed carnivals, and rice with beans cooked in huge pans on the streets. The dish is hearty, easy – from savory street food. And spices and the vegetables give deflating the basis of bright fragrant shade. Especially for the vegetables cut in small cubes with the side 2 mm, this cutting is called brunoise. Then the vegetables give the dish a taste and they are ready all at the same time. "Moors and Christians" - a great side dish to meat in a spicy sauce, but on fast days it can be eaten as a main dish.

For this dish we need these products.

Soak the beans for 2-3 hours. And better at night. Then boil them until soft.

Carrots and Bulgarian pepper cut into small dice about the same size as grains of rice.

Onions and garlic are chopped too finely.

Garlic and onions fry until changes color.

Add sliced carrots and peppers. Fry for 5-7 minutes.

Rice, previously washed clean, put to the vegetables and fry until transparent. Then you can gradually add vegetable broth, each time stirring the rice. To do so, until the rice is ready - about 15-20 minutes.

In the last turn to enter the finished beans and spices. Stir and taste. If you are satisfied, then put the mixture in a heatproof dish and put for 15 minutes in the oven, preheated to 200g. With that rice and beans are a little flushed.
