Cooking
Bake the pumpkin until tender. Grind in a blender to puree state. We will need 1 Cup puree (250 ml). It is advisable not to boil the pumpkin, extra fluid in this dessert is not needed.
Lightly beat 2 eggs and egg white.
Add the sugar, vanilla, salt, cinnamon, cloves, black pepper, ginger, and pumpkin puree. Mix well.
In the end, add very hot milk (but not boil) and stir.
"Dough" (which is a liquid) pour into ramekins. Do not fill to the edge. To put ramekin in a deep ovenproof form.
In the form pour the hot water. The water level should reach the level of the test in ramekin. Put in a preheated 180 degree oven. Bake for 30-40 minutes. If the mold shake, flan has a little "wiggle". Immediately get ramekin from the water and allow them to cool down. Then it is advisable to put in the fridge. Usually dessert is served cold, the choice is yours :) just Before serving sprinkle with cinnamon and nutmeg.
