In olive oil lightly fry chopped: garlic (finely), onion (half rings). Add diced, peeled tomatoes. (The skin is easily removed if you omit the tomatoes for 1-2 minutes in boiling water.) Simmer until the tomatoes fall apart. Add the prepared mussels. If you take cleanse, the pre-defrost and rinse with cold running water. Simmer until conch is not revealed, or until the shelled mussels are tender (about 10-15min).
