Cooked candied pomelo for the second time. Very much we like them. One bummer - drying in the oven. Last time took about 4 hours. I joined the process of cooking and drying in one step, using the wok. Candied fruit produces sweet, with a citrus note!!! Outside of candied crust, and inside a sweet syrup!!!

Cooking
Cut the pomelo peel into desired pieces.
Download peel in a pot or any suitable container and pour clean water so that all peel was in the water. Morning and evening, change the water. So two days. Then pour water, pour clean cold water, put it on the stove. Bring to the boil and cook for about 5 minutes. Drain off the water. Allow the crusts to cool.
Good squeeze, like a sponge, the cooled crusts.
Take a wok and boil it in the syrup. Pour water. Pour the sugar. While stirring, allow the syrup to boil, diminish the heat and cook for 5 minutes. Fill the crust. Stir.
Add the fire and boil the peel in the complete evaporation of liquid.
Actively mix the crust. The bottom metal pans will become white from the sugar, do not worry, all elementary rinsed with water!
We spread our candied on the grill and go to sleep or else just leave to dry for a few hours.
