The pan put on the stove. A good warm up. Without oil. Put chopped mushrooms and add a few tablespoons of water. Mix well. You can cover the lid. Mushrooms are reduced in size and let the juice.
The liquid needs to be drained. Of necessity, it can be used. For example, for soup. The mushrooms in the pan a little dry to evaporate excess liquid. Then add the required amount of oil or butter and fry.
In this way, the mushrooms can be prepared for anything. I like for the salad. Out crispy and juicy.
