Pancakes from triticale
Feature of flour from triticale, in addition to its unconditional utility is a mild, subtle, nutty flavor. It is transmitted to all the dishes of this meal, including pancakes. And the color is very nice...

Ingredients

  • Flour

    2 cup

  • Sugar

  • Salt

    0.5 tsp

  • Soda

    0.5 tsp

  • Chicken egg

    2 piece

  • Vegetable oil

    2 Tbsp

  • Milk

    600 ml

  • Citric acid

    2 pinch

  • Water

To prepare the products. Eggs should be taken out of the fridge to warm to room temperature. Milk slightly warmed, a little, until warm.

Both types of flour sift into the pan and mix thoroughly.

Add sugar, salt and soda, mix again.

Pour about half the warm milk. Knead the dough until smooth, it will be thickish.

To drive the egg yolks and mix again.

Then pour rest of the milk and stir the dough until smooth.

Add the oil and again mix well until smooth. Vzbit proteins in the lush foam (doesn't have to be quite so steep peaks). Set aside.

Citric acid diluted in a small amount of warm water.

Pour in the batter, mix quickly. The dough immediately starts, a little white and covered with light foam.

In the end add whipped whites and gently stir them into the dough.

Here is a lush, airy dough we get.

Immediately begin to bake pancakes. These are the devices I use. Small ladle, it fits exactly the portion of the test, which is needed for my pan. Flat spatula to turn and remove pancakes.

Pan (preferably cast iron or, in extreme cases, heavy with a thick bottom), lightly grease (lard, butter or oil - to your taste), pour a thin layer of dough... wait, when the surface of the dough will change its color

And turn the pancake to the other side. Fry until cooked.

Directly in the pan to roll the pancake in four and transfer to a saucepan. I do so, but you can just overturn a pancake on a plate and assemble them later in a pile.
