Brian is a vegetable stew, baked with feta. The recipe for this stew I brought from Greece a few years ago, since then regularly cook. This time I decided to experiment and submit it to the test. The result exceeded all my expectations! Very harmonious, tasty and spring-like bright! The dough was crispy and soft, the vegetables juicy and vibrant, feta gives the dish flavor. The dish is pretty low calorie and healthy. The dough in vegetable oil instead of butter, and the filling is composed almost exclusively of vegetables.

Cooking
The first thing you need to prepare the dough. This will proseem the flour into a bowl, add salt and a thin stream while stirring introduce oil.
Then gently entered the water and knead the dough is with your hands. Do not pour all water at once, might need a little less or more, look at the status of the test.
The finished dough roll into a ball, wrap in foil and remove in the refrigerator for half an hour.
While the dough is resting, prepare the vegetables and put them to bake. Eggplant cut into cubes, sprinkle with salt and set aside aside for 5-10 minutes.
The rest of the vegetables: potatoes, zucchini and peppers cut into cubes slightly smaller than the eggplant. Eggplant wet paper towel, remove moisture, and with it the possible bitterness. Mix all the vegetables and sprinkle with salt. Vegetables need a little it needs more salt, because the dish is salty feta.
Prepare the dressing for the vegetables. In a bowl, mix squeezed through a press garlic, oregano and oil. Mix.
Dressed vegetables and send in the oven for 20-25 minutes at a temperature of 200C.
Roll out the dough with a thin round layer, over a baking tray with baking paper.
To the stuffing add the tomato after removing its skin and cut into cubes.
Spread the filling in the center of the dough, the edges of the wrap and send it back in the oven for another 15 minutes.
Sprinkle the breadcrumbs feta, breaking her hands. Do not regret feta, baked it is very tasty. And put back in the oven for another 15-20 minutes, turning on or blow-off grill to feta cheese and the dough is browned.
Ready the biscuits sprinkle with fresh herbs and served to the table.
