The bread is prefab by the sponge
I continue to experiment making bread. Today it was baked on a makeshift "Hearth", i.e. the form of bread is put on upside down preheated baking tray. Delicious bread on the flour of the team.

Ingredients

  • Mineral water

    260 ml

  • Yeast

    15 g

  • Flour

    275 g

  • Buckwheat flour

    100 g

  • Wholegrain wheat flour

    60 g

  • Sesame

    1 Tbsp

  • Salt

    2 tsp

  • Sugar

    1 tsp

  • Margarine

    10 g

Yeast, knead, cover with mineral water and leave for 5 minutes to dissolve.

In the swollen yeast add 4 tbsp white whole wheat flour and 3 tbsp rye, salt, sugar. To make the dough. A bowl cover tightly and put in a warm place for 1.5 hours. (you can use the microwave, run it with a full glass of water for 1 minutes, turn off and place bowl inside or preheat the oven at 50C, disable, and place the bowl).

After 1.5 hours, the dough is ready.

The container for the bread machine download the yeast mixture and remaining flour, margarine.

Select the program "dough" 90 min "start". You can bake the bread in X/P, you can set the program "bread" crust and "dark". I bake bread in al. the oven. The kneading and the rise of the test lasts 90 mins after 10 mins of kneading add the lightly fried sesame seeds.

After 90 min the dough out of the bucket, put it on a Board, hands grease and lightly punch down dough.

Shape (19 x 8) grease with vegetable oil, put the dough in it, lightly flatten the dough across the form.

Cover with plastic wrap or close the bowl and put in a warm place to rise. Preheat the oven to 50C, heat up, shut off and place the form with the dough inside.

My dough came in 20 min.

Flip a baking sheet upside down (so I built a kind of Hearth), set in the center, preheat the oven together with the baking tray to 230C. The form with the dough put on baking tray and bake first 10 minutes at 230C, then reduce the temperature to 200C and bake until fully cooked 20min. Be guided by your oven. Remove the bread from the mold, put on the grill, cover with baking paper and a towel. Leave the bread to rest for 8 hours. Weight 640г.
