Cooking
Rinse and dry the tenderloin, cut into cubes 4х4см. Season with salt and pepper, sprinkle the ground (preferably coarse ground), paprika, chopped garlic and ground Bay leaf. Bay leaf can be ground in a mortar. Pour the white wine and leave for 1 hour.
On a heated olive oil fry the slices of meat (to shake off the marinade) until Golden brown, add the anise seeds and cumin and fry 1 min. on high heat, reduce the heat add the remaining marinade, strong black coffee, sugar, Basil, chestnuts.
(Chestnuts can be boiled and serve separately from the meat or replace it with a garnish of boiled potatoes.) Simmer, covered until tender. For a few minutes before the end of extinguishing add port. Bring to a boil. Shut off and serve.
If you decide to file the chestnuts/potatoes separately, then the sauce can be thickened a little passerovannoy until Golden brown flour. Bon appetit!
