Cooking
Warm kefir add the yeast, 1 tbsp sugar and 2 tbsp flour. Mix well, cover with a towel and allow to rise.
Sift flour, add salt, remaining sugar, vanilla sugar, mix well. In approaching the dough to enter the softened butter (70 g), 1 egg, then gradually add the flour and knead soft, pliable dough. Coat the dough with oil, cover, place in warm place and allow to rise 2 times. For proofing of the dough I used the slow cooker.
While the dough rises, prepare the raisins: rinse, pour boiling water for 10 minutes. Then drain well and dry the berries.
Coming up to roll out the dough to a thickness of about 0.5 cm, sprinkle with melted butter (30 g).
On the surface of the dough evenly spread the raisins, roll roll, edge to take into the ring. The filling can be any, according to your taste.
Gently put the wreath on a greased baking tray, using a knife to make cuts around the entire circumference of the ring. To give up.
Carefully separate the white from the yolk. Lubricate the wreath with egg yolk. Bake at 180 degrees for 20-30 minutes (depending on oven).
While wreath is cooling, prepare the protein frosting. I did it using a mixer. Begin whisking protein first at low speed of mixer, then gradually increase the speed. Protein should wsbase in the stable foam. Gradually, for about 1H. L. add sifted through a sieve the icing sugar. At the end add the lemon juice and beat for another 8-10 seconds.
The cooled wreath to cover with icing, decorate on your own. For decoration I separated a little glaze, added some green food dye, painted sprigs of Mimosa. Flowers made of marmalade. Bon appetit!
