Cooking
Include an oven on 180 C. in a coffee grinder to Grind the whole almonds with the peel.
Mix ingredients for crumble: 50 g sugar 25 g almond powder 50 g of butter, 40 g flour tbsp cocoa. I was lucky enough to use a sugar Muscovado, because of its amazing and unique taste of caramel... mmm... Hands get crushed into crumbs.
Bake on parchment for 10-15 minutes until tender. Remove the crumble and allow to cool. Reduce the temperature to 160 degrees.
Apricots wash, dry, halve, remove pits. In a saucepan, dissolve 30 g of butter, add the sugar and apricots, slightly caramelizing.
While caramelized apricots, to prepare the dough 120 grams very cold butter slices, 80 g sugar, 200 g flour, 1 egg, 25 g almond powder, 1 tsp of baking powder and a pinch of salt. I just put all the ingredients in a food processor and played a few minutes...
Then remove with a cooking shovels and just hands to gather into a ball. Between two layers of parchment, slightly preparativ with flour, roll out the dough to a thickness of 7 mm, put into shape, to cut off the remnants and put it in the refrigerator.
You only have to cook the flan, whisk mixing 250 ml of cream, 3 eggs, 3 tbsp flour, 50 g sugar and 1 tbsp cocoa. Assembly. On the basis pour half of the crumbs, put slices of apricots (I cut the halves again) and pour all the flan. Bake at 160 degrees for 30 minutes. Serve sprinkled with crumbs.
