Cooking
Octopus (I have a small, but...:-) very fresh) - you need to wash and clean, as shown in the photo.
Octopus cut into large pieces and add to the pot, add vinegar and 50 g of water. Put on the fire.
After some time of liquid in the octopus becomes larger, they begin to stew in their own juice. Cook for approximately 40 mins, during this time portions of the input wine, in the end add black pepper. OCTOPUS SALT IS NOT NECESSARY. THEY ARE QUITE SALTY. Ready for further preparation, the octopus is soft, fragrant and delicious. Cut them into smaller pieces.
Prepare the onion. For easier cleaning, you can omit the onion in hot water, then peel very easily removed.
I have mostly red onions for stifado-it is better to use a white onion in the finished dish, he's more handsome.
Onions add to the octopus.
There also add the garlic, rosemary, Bay leaf, allspice, nutmeg, hot red pepper. In the traditional version also add a little cinnamon and cloves, but in my family don't like these ingredients in stifado.
