Unusual, but very delicious jam - assortment of apples, squash, melon and grapes with a delicate hint of almond and a delicate aroma of lemon and vanilla.

Cooking
I wrote the weight of products - already cleaned and chopped. Melons and squash peel and seeds, cut into small long slices. Apples cut into thin slices with the peel, removing the core. Mix well.
Add 2.5 kg of sugar, mix well.
Sprinkle with a little sugar and leave for 2-3 hours.
The grapes are free from twigs, rinse and pour boiling water for 10 minutes. Then drain the water.
Lemons peel and pour boiling water for 10 minutes.
With a lemon, drain the water, dry with a towel and cut into thin slices, removing seeds.
Now, put the mix on the fire, bring to a boil and cook for 10 minutes on low heat, stirring occasionally. Then turn off the heat, add the grapes and sliced lemons, stir and leave until cool.
When the mass has cooled, add 1 kg of sugar, again put on fire, bring to boil, stirring, cook for 10 minutes. Again leave it to cool down. This procedure is done 4-5 times. Jam I was preparing for the day. Last step: put the cooled jam on the fire, bring to boil, boil for 10 minutes, then add the vanilla sugar and pour in the almond essence (if there is no such essence, it is possible and without it: the first time I cooked this jam, I added strawberry essence was also really delicious), cook for another 3-4 minutes. Put the hot jam into sterilized hot jars and close with sterile lids, this jam can be closed and tight plastic lids, but you can roll up and iron.
