Eateries cakes choux pastry
Offer to prepare Diners cakes choux pastry. With toppings you can dream up and with the color too. For black I used cuttlefish ink.

Ingredients

  • Flour

    130 g

  • Butter

    60 g

  • Water

    200 ml

  • Cuttlefish ink

    2 g

  • Chicken egg

    3 piece

  • Soft cheese

    100 g

  • Sour cream

    2 Tbsp

  • Mayonnaise

    2 Tbsp

  • Black pepper

  • Caviar

    2 Tbsp

  • Salt

1. Preheat the oven to 180C IN a saucepan bring to boil water with butter. Add salt, mix well.

2. When the butter is completely melted, quickly add the flour, remove from heat and stir with a wooden spoon.

3. Then put on fire and cook, stirring quickly, until the dough is smooth, homogeneous, and easily begin to fall from the walls of the pan. The pan remove from heat, slightly cool and enter the eggs one by one, each time stirring well. Then add ink to mix.

4. Using a pastry bag, deposited on parchment-lined baking sheet in small strips. Bake for 10 minutes, then slightly open the oven for a few seconds to release the excess moisture, and bake another 10 minutes. Be guided by your oven.

5. Cream cheese mixed with sour cream and mayonnaise, seasoning with black pepper.

6. Now spread a layer of custard strips, put the cream on top. Then again a layer of strips, only to put them across (like a stack). And so to the end. The finished cake should stand a couple of hours, then slice into serving-size squares and decorate with caviar.
