Cooking
Prepare the sponge cake: whisk the yolks with 2/3 of sugar in sticky light cream.
Proteins whisk until peaks, add remaining sugar and continue to beat until density.
Mix the egg yolks with proteins.
Stir gently from the bottom up.
Then add the flour and the same movements, bottom-up, gently stir.
The dough spread in a greased and floured form. Mine is leaking, so I put it in parchment.
Bake at 200 degrees 25-30 minutes. Readiness check the match. It is advisable to before use, the sponge survived 8-12 hours.
Now prepare the syrup for impregnation biscuit. Before use it needs to cool to room temperature, so it must be done in advance. Pour the sugar with hot water, put on stove and bring to a boil. Let cool and add brandy and rum.
It is now the turn of Charlotte cream: mix sugar with egg, add hot milk, bring to a boil and cook, stirring constantly, five minutes.
Should be a yellow viscous mass. Cool.
Beat butter, gradually adding the egg mixture. At the end of whipping add the vanilla and cognac.
Ready sponge cake cut into two layers and impregnated with syrup.
Then the bottom cake grease cream
Put on top of the second and daubed cream the whole cake.
Fry peanuts and grind in a large crumb.
Sprinkle cake with nuts, top nuts - powdered sugar.
Refrigerate for 2-3 hours.
The cake is weighing in at 1 kg and is designed to form 20-22 cm in diameter, you can use a square shape. However, as far as I remember, these cakes were sold round. Although, it probably depends on the region of residence. I don't have such a small shape (I like big cakes), so I baked in 26 cm, increasing the rate of biscuit and syrup for impregnation twice. The amount of ingredients for the frosting as in the recipe.
I want to say that the cake turned out pretty tasty, although the recipe and simple. That's what guests! This cake was very fond of my sister, and I'm sure it will please when she comes to visit..
