Description

Braid
A delicious twist, dough and cream, no milk-water-oil. Pastries from this dough is well suited to the Easter table.

Ingredients

  • Flour

    500 g

  • Yeast

    1 pack

  • Cream

    250 ml

  • Sugar

    80 g

  • Chicken egg

    2 piece

  • Egg white

    1 piece

  • Vanilla sugar

    1 pack

  • Salt

    0.25 tsp

  • Milk

    1 Tbsp

  • Yolk egg

    1 piece

  • Granulated sugar

    3 Tbsp

Cooking

Cream slightly warmed to a temperature of 36-37 degrees.

The yeast is well mixed with flour. Add the eggs, protein, sugar, salt, vanilla sugar, pour the cream and knead the dough.

The dough can be kneaded with a mixer 1 minute at low speed, 4 minutes on high, until smooth. My favorite bakery coped with the task in 7 minutes.

Cover and leave in a warm place until double in volume. In a breadmaker the dough was about 1 hour.

Podesiti the dough, divide into three equal parts. Each roll of a strip of ~6 cm and ~40 cm long, roll into tube, edge work. The dough is very tender, obedient.

Weave pigtail. Yolk mix with milk, coat with mixture of the braid, sprinkle with granulated sugar. Let rise until significant increase in volume.

After 35 mins in the oven at a temperature of 32 degrees network has grown significantly.

Bake at 180 degrees for 30 - 35 minutes. I was baking for 30 minutes (after 25 minutes a well-browned, but I left for another 5 min.). Cool on a wire rack.
