I pre-salted Turkey breast...
Prepare the batter: whisk the whites with the flour, starch and a small quantity of boiled water..
The batter should be thick and tight..
Mix the batter with a fillet, to well-enveloped and put in the fridge for an hour (can be less).
Heat the oil, fry until Golden brown..
